There is NO WAY I can have avocados in my fridge and not end up making guacamole. My hubby loves it, my friends love it, and my tummy lovesss it. You know what’s so good about this guac is that the flavors are very present. The fresh coriander and lime make all the difference. It’s also a great way to make sure you have your avocados on a weekly basis and not end up feeling so guilty. We most always have Nachos at home, so there you got it perfect snack and dip match up during soccer games or before you serve dinner for your guests. We also make it a lot when we make Mexican, which is quite often. Some chicken quesadillas, or minced meat tacos— YUM!

Ingredients
- - 3 ripe avocados (make sure they're soft at the touch and not too ripe that they're black on the inside, getting that perfectly green avocado makes all the difference. If I find ripe ones, I'll keep them in the fridge which slows down the blackening process. However, if they're hard I'll keep them out until they're soft)
- - Juice of 2 limes
- - 1/2 cup diced onion
- - 3 TB finely chopped coriander
- - 2 diced tomatoes
- - 1 tp minced garlic
- - salt to taste
Directions
- Step 1 Peel and remove pulp of avocados and finely press with back of fork.
- Step 2 Add onions, lime, coriander, tomatoes, garlic, salt and mix all together.
- Step 3 Serve with Nachos, chips, or Mexican food.
