I was walking through “Ikea” once, and I laid my eyes on the most perfect granola cups. I picked up ten and decided to host a breakfast that weekend.

Finding the right recipe. I wanted to make my own granola at home, and I wanted it to sort of crunch. Unlike all other times when I usually try out a recipe a couple of days before the event, I prepared the granola only a night before. I mean how bad could it turn out? I was really lucky because this recipe has the perfect blend of saltiness and sweetness, you don’t end up feeling like you just had desert! It’s very fulfilling, super healthy, and the perfect snack. This recipe makes enough oats so that you have a supply for at least 2 weeks. Pack them up in an air tight container, that way anytime you feel like having a snack, all your ingredients are ready. I almost always have yoghurt and berries in my fridge. On a typical day, I’ll have a cup of granola at like 11 am, it boosts my system for a couple more hours to last until lunch at 2:30.

To balance out the crunchiness of the granola, you have the yoghurt that once layered, seeps into the granola and softens it up. That way the granola doesn’t get too mushy.

You are bound to impress your guests both with the flavor and the looks 🙂

Granola Yoghurt Parfait

Make the granola a night before, so that it can cool down before serving.

Ingredients
  • 2 cups oats
  • 1 cup sunflower seeds
  • 3/4 cup brown sugar
  • 1/2 cup honey
  • 1/4 cup sesame oil
  • 1 tp vanilla
  • 1/4 cup water
  • 2 tp cinnamon
  • 1 tp sea salt
  • 1/2 cup gold raisins
  • 1/2 cup dried cranberries
  • For Parfait:
  • Greek yoghurt and berries (you're choice, but I usually go for raspberries and blackberries) for layering
  • Chia seeds and honey for top decoration
Directions
  • Step 1 Preheat oven at 170 degrees celsius
  • Step 2 Place oats and sunflower seeds in a bowl
  • Step 3 In another bowl
  • Step 4 combine sugar, honey, oil, vanilla, cinnamon, salt and the water
  • Step 5 Mix all together and pour in a pan and spread
  • Step 6 Bake for 40M. Stir around the mixture to make sure it doesn’t stick. Bake for another 20M until golden.
  • Step 7 Pour hot mixture into bowl, add raisins and cranberries
  • Step 8 Once cooled, keep in air-tight container
  • Step 9 Parfait:
  • Step 10 Right before serving, Layer: granola-blackberries-yoghurt-raspberries. Drizzle chia seeds and honey on top.
  • Step 11 Depending on the size of your glass cup, you can add more layers (only do this if it’s more narrow and longer than mine in the picture, you don’t want it too be too much in one cup). But always place on the bottom granola, and on the top last layer yoghurt and raspberries.
