I’m back from summer and I am so ready to try out some new recipes! Lots of ideas going through my head and lots of recipes are piled up waiting to be chosen.
After a long summer that was fun and hectic it’s great to be back home in my kitchen, with my utensils, and back to school LOL. I dropped my son off the other day and rushed back home to try out these pancakes. I invited a friend over and we loved their fluffy texture and the fact the you would have NO idea that there were oats in it! Super healthy and super filling, these are a great option for kids and adults that need a good energy kick early in the day. Top them off with anything you like but I personally like maple syrup and berries.

Banana Oat Pancakes
Ingredients
- 1 1/2 cups rolled oats
- 1 1/4 cups mashed banana (about 2 very large bananas)
- 1/4 cup plus 2 TB Greek yogurt
- 1/4 cup plus 2 TB milk
- 3 large eggs
- 1 tsp honey
- 1 1/2 tsp baking powder
- 3/4 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp nutmeg
- Serve with icing sugar, maple syrup, berries, peanut butter, etc.
Directions
- Step 1 Place oats in a blender and blend until they become fine. Add bananas and all the other ingredients and blend until the mixture becomes smooth. Let rest for 10 M.
- Step 2 Heat a small spoon of butter in a frying pan and once its melted spread the whole pan with it. Place a small mound of the mixture in the pan and leave until sides start drying and then flip over. You want that dark golden color to emerge. Continue until you finish the whole mixture.
- Step 3 Serve stacked and decorated with whatever your heart desires 🙂
