I have no idea why I haven’t made these fries before! No, like you are seriously missing out if you haven’t baked sweet potatoes yet!
I bought 2 sweet potatoes last week and have been thinking of ways to cook them ever since, should I bake them full in the oven with cheese, veggies, and minced meat? Should I puree them next to my grilled chicken? Anyway, I just left them since I couldn’t make up my mind.
So last night I was watching a really good movie and was fighting the urge to grab a bag of chips and dig in. But, I needed to snack on something and I really didn’t want to give in to junk. Then, ding ding ding LIGHT BULB! I remembered the potatoes and I have heard about these fries for ages so I’m like I’ll just give them a try.
I am really so proud of myself for preparing something so healthy in less than 30 minutes using minimal ingredients, and I am so happy that they actually tasted SO good. They’re going to be my go-to snack when I feel like binging for sure. This fantastic yoghurt sauce pairs really well with the potatoes and I loaded it with natural immune boosters and antioxidants such as cumin and paprika.
Mind you, sweet potatoes are good for you for a number of reasons:
- High in Vitamins B, C, and D
- Contain Iron and support a healthy immune system
- Great source of Magnesium, the anti-stress mineral
- Great for collagen and aid in the effects of aging
So you’re pretty much doing your body a good thing if you get into the habit of binging on Sweet Potatoes instead of commercial chips. You will love them!
Baked Sweet Potatoes Fries
Ingredients
- Potatoes Marination:
- 2 large Sweet Potatoes (peeled and washed)
- 1 tsp cumin
- 2 tsp garlic powder
- 1/2 tsp salt
- 1 tsp smoked paprika
- 2 large TB parmesan cheese
- 3 large TB olive oil
- 2 TB chopped parsley
- For Yoghurt Mix:
- 2 large TB greek yoghurt
- 1 large TB labneh
- 1 large TB chopped parsley
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
Directions
- Step 1 Preheat oven
- Step 2 Slice the potatoes into strips (not too thick or thin – about 1 inch thick ). Put the potatoes (make sure they are dry from water) on a parchment paper on pyrex.
- Step 3 In a separate bowl combine all the potatoes marination ingredients (except parsley, leave for later) and mix really well.
- Step 4 Pour the mixture on the potatoes and rub really well. Bake for 20 M (half way through flip them over to make sure both sides are cooked) and then turn on heat from above and leave for 5-10 M more depending how crispy you like your fries. Leave to cool, about 15 M. Garnish with parsley leaves.
- Step 5 In a separate bowl mix all the yoghurt ingredients together and keep in fridge until time to serve.
