Homemade Granola is a healthier alternative than cereal for your breakfast. Full of nutrients, crunch, and super delicious. I love that you can keep changing up the ingredients to change the flavors.
But, I felt this recipe is the perfect blend of sweet and crunchy, and I love that it is so simple to make and lasts for up to one week (it will be gone in much less I can guarantee).
Enjoy this Granola with my Frozen Berry Bowl, please find the recipe in a separate post. Or simply as your morning cereal with raisins and some banana slices.
The key in this recipe is to use Large Oat Flakes, I like to use Organic Larder. Please do not use rolled oats as you will not get the same results.
Homemade Granola
Keep in an air tight container for up to 1 week for ideal crunchiness.
Ingredients
- 1 cup oats (large oat flakes)
- 1/4 cup coconut oil
- 1/2 cup honey
- 1 tsp vanilla
- 1 tsp cinnamon
- a sprinkle of salt
- 1 TB chia seeds
- 1 TB almonds (peeled and shaved)
- 1 TB mini chocolate chips (optional)
Directions
- Step 1 Preheat oven at 170 degrees celcius.
- Step 2 Mix the coconut oil and honey in a large bowl, whisk really well.
- Step 3 Add vanilla, cinnamon, salt, almonds and chia seeds. Mix well.
- Step 4 Mix in the oats until all is covered well with mixture.
- Step 5 Spread on parchment paper in pyrex and bake for 20M (at 10M open oven and just give them a stir).
- Step 6 Take out, spread chocolate chips, and bake for another 5M.
- Step 7 When you take them out of oven, just make sure there are no lumps (so spread them out well). Leave out to completely cool, they will harden as they cool.
- Step 8 Store in air-tight jar, I like to use mason jars, for 1 week max in order to keep crunchiness.
