I think by now you all know my morning struggle with my son to have something new for breakfast! LOL

He really isn’t a breakfast kind of person, and he’s a picky eater… can you guess who’s genes are dominant ?? :p.

Anyway, so the kids were up at 6 am on a Friday and surprisingly I was feeling pretty energetic. So we went down to the kitchen, the sun wasn’t even up yet, and I pulled out a pack of blueberries and I showed my son. I asked him how about we make blueberry pancakes (I’ve been secretly craving them for a while), and against all odds he said SURE!!!

I couldn’t believe it, maybe both of us were just having a good morning! He loves helping out in the kitchen, and I think when he does he feels more encouraged to try new food! Im so glad for my little assistant that morning because he ended up loving them and asks for them every weekend now :):).

Blueberry Pancakes

Ingredients
  • 1/4 cup greek yoghurt
  • 1 large banana (mashed)
  • 1 and 1/2 cup rolled oats
  • 2 large eggs
  • 2 TB almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 cup fresh blueberries (washed and dried)
  • 1 TB butter
  • For serving: vanilla ice cream, fresh blueberries, or maple syrup
Directions
  • Step 1 Mix in a blender the yoghurt, oats, and banana until smooth.
  • Step 2 Add in eggs, milk, baking powder, vanilla, and cinnamon. Blend well.
  • Step 3 Finally, add in the blueberries and pulse twice, so they don’t become too mushy.
  • Step 4 Heat pan and place butter. Spread the butter out well.
  • Step 5 Scoop out with a ladle, one scoop per pancake.
  • Step 6 Serve with vanilla ice cream, fresh blueberries, or maple syrup
