Frozen Berry Bowl

I woke up one morning thinking that I am so over my usual breakfast; halloumi sandwich, labneh, eggs, cereal, over and over again!

And to be very honest, in the back of my head, I have been contemplating going on a vegan diet. I tried it once before and it was a life changer! I lost so much weight, my body just shrunk, I felt lighter, more energetic, and just overall really good!

So, I decided to make this berry bowl which is purely vegan. I used all natural ingredients, no artificial sweeteners. With a finishing drizzle of honey, It just tasted so darn good!

Initially, I hadn’t added any granola, but I felt like it needed a crunch. So thats when I decided to make my own. Please find the recipe for the granola in another post.

I am sure you will be making this bowl as often as I do, and you will learn to be very creative with your ingredients. You pretty much need 3 key ingredients:

1- 2 Frozen fruit (banana is essential and choose from one of the following: strawberries, raspberries, blackberries, mango)

2- A crunch essential (granola, walnuts, almonds, pistachios, coconut shavings, etc)

3- Decorative tasty seasonings (chia seeds, coconut powder, etc)

and a delicate drizzle of honey 🙂

Note: this recipe requires fruit frozen overnight and then kept out of freezer 30M before eating.

Ingredients
  • 1/2 frozen banana (essential)
  • 3 frozen strawberries/ blueberries/ mango/ blackberries (essential)
  • 1 TB honey
  • (below are all optional and you can mix and match depending on your likings)
  • 1/2 regular banana
  • 4 TB Homemade Granola (find recipe in another post)
  • 1 tsp chia seeds
  • 3 raspberries
  • 3 coarsely chopped walnuts
  • I also change it up with coconut powder, cocoa nibs, pistachios, almonds, and different fresh fruit such as kiwi, berries, etc
Directions
  • Step 1 Remove 2 frozen fruit (banana is essential) from freezer half an hour before you plan to eat.
  • Step 2 Blend really well until you get a thick creamy ice cream texture.
  • Step 3 Chop banana for topping and any other fruit you like and assemble.
  • Step 4 Sprinkle Granola, chia seeds, walnuts.
  • Step 5 Drizzle the honey in the end and enjoy immediately.
