Fig Energy Bites

Here’s the thing, I love figs and I love oats. Figs make me feel nostalgic, when I was younger, my family used to spend our summers in a village in Northern Lebanon. The village was famous for a lot of naturally grown produce, in particular green olives, wild cucumber, and figs. The scent of fig-scented pathways still lingers in my head. For some reason it was always the tightest and most rural streets that had the biggest and most nourished fig trees. The hungry passer-bye did well to these trees. Supply and demand. And the most beautiful sight was the fallen figs that had burst open and exposed their inner scarlets to the sun while they lay under the oaks and pine nuts.

Then I saw figs on display one day, deep purple- olive green skins.

I rushed home and whipped up the cutest little Energy Bites.

What I like about these bites, is that in each bite you take, you’re bringing in so many nutrients into your body which otherwise is very difficult to do. And because they’re frozen, they are very refreshing and cooling. I like to put them in a little container when I have to leave home to run some errands. They’re definitely a protein-packed snack.

Fig Energy Bites

Add and adjust ingredients to your liking

By:

Ingredients
  • 8 figs (peeled and cut into chunky slices)
  • 8 Majdool dates (peeled and cut into slices)
  • 2 TB oats
  • 1 TB of each
  • flax seeds (grounded), sunflower seeds
  • Handful almonds (peeled and sliced)
  • Handful walnuts (crushed)
  • 1 tp of each
  • cinnamon, brown sugar, chia, and honey
  • 1 tp vanilla
Directions
  • Step 1 Blend all the ingredients but not too fine. Roll into balls and put into freezer.
  • Step 2 Once they have solidified, you can eat. Take out of freezer just before eating.
  • Step 3 They can last in the freezer for upto 1 week
