This recipe was Sweet Snack Challenge #2, for one week I will refuse to consume any artificial sugar snacks. Although there are chocolate chips in this recipe, they can easily be eliminated and you can just stick to the raisins. I added the chips to push up the sweetness level a bit hehe. To be honest they really did satisfy the sweetness urge. I also found them to be filling and great with my afternoon cup of coffee. I even grabbed them as a quick breakfast once when I didn’t have the time to sit and eat.

Homemade Healthy Granola Bars
Best to consume within 3 days
Ingredients
- 2 cups oats
- 2 TB ground flax seeds
- 1 TB chia seeds
- 1/4 cup organic peanut butter
- 1/4 cup honey
- 1/2 cup coconut milk
- 1/3 cup mini chocolate chips
- 1/3 cup raisins
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
Directions
- Step 1 Preheat oven at 170 degrees. Prepare a 20 x 20 cm pyrex with cooking spray on all sides and set aside.
- Step 2 In a medium bowl combine oats, flax and chia seeds.
- Step 3 In a separate bowl combine peanut butter, honey, milk, chocolate chips, raisins, cinnamon, salt, and vanilla.
- Step 4 Pour the wet ingredients over the oats and mix until combined well.
- Step 5 Pour the contents into the pyrex and pat with your hands.
- Step 6 Bake for 18 M or just until the sides become golden.
- Step 7 Remove and leave to cool for 20 M before cutting into rectangles.
- Step 8 Separate with pieces of parchment paper and store in a Tupperware.
