Pumpkin Banana Bread

When it rains it pours. Thats what happened yesterday in Jeddah. We woke up and the entire city was flooded! Despite the warnings, I thought that I would still be able to go to our Restaurant and continue our photoshoot. I was wrong. Very wrong. The day pretty much got cancelled!

No school. No work. No car. No safe streets. So we just stayed home and tried to make the best of it. That meant —> off to the kitchen. My son loves cooking and baking, particularly Banana Cake. I opened up the fridge and I found a beautifully perfect orange pumpkin that I had picked up earlier, so I decided to through it in our cake. But we obviously first made a Jack-o-Lantern and celebrated and danced around it in the bathroom, the only dark room in the house at 1 pm.

Anyways, it was soooo good. I secretly slipped in the pumpkin so my son never really know it was in there, but he ate it and loved it…

Hey, I guess this counts as Sweet Snack Challenge #3. Deliciously yummy as an afternoon coffee snack :).

Preparing the Pumpkin Purée takes around 45 M

Ingredients
  • For Pumpkin Purée (we need 3/4 cup for this recipe, the rest you can store in a glass jar in the fridge):
  • 1/2 Pumpkin (peeled, seedless, and clean)
  • 2 TB Honey
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 1 TB Coconut Oil
  • 2 TB Maple Syrup
  • For Banana Cake:
  • 2 cups all-purpose Flour
  • 3/4 cup Sugar
  • 3/4 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1 tsp Nutmeg
  • 2 ripe Bananas, mashed well
  • 3/4 cup Pumpkin Purée
  • 1/4 cup Buttermilk
  • 2 Eggs
  • 6 TB unsalted Butter (melted and cooled)
  • 1 1/2 tsp Vanilla
  • 1/2 cup Chocolate Chips
Directions
  • Step 1 Preheat Oven at 170 degrees
  • Step 2 Once the pumpkin has been cleaned, cut into cubes and place on parchment paper on a tray and drizzle honey. Bake for 45 minutes or until once you cut it is very soft.
  • Step 3 Remove the pumpkin cubes and place in bowl. Blend until very well pureed.
  • Step 4 Add cinnamon, nutmeg, salt, coconut oil, and maple syrup. Mix well.
  • Step 5 In another bowl mix flour, sugar, baking soda, cinnamon, nutmeg.
  • Step 6 In another bowl mix bananas, pumpkin puree, buttermilk, eggs, butter, vanilla, chocolate chips.
  • Step 7 Mix wet ingredients in the flour mix.
  • Step 8 Line a loaf pan with parchment paper so that the paper hangs over the two longer sides of pan. Grease the parchment paper and the sides on the pan with cooking spray.
  • Step 9 Pour the mix into the pan.
  • Step 10 Bake for 55M, but check it at 50M (make sure toothpick comes out dry).
