Perfect Chocolate Frosting

Perfect Chocolate Frosting

I’m not sure what it is about kids and cupcakes. The idea of making them is so fascinating to them but when they’re right there in front of them they don’t eat them! I guess the mixing of the ingredients, the licking of the bowl, and the IDEA that they actually cooked something is what sells it. And then I realized the countless times my son has forced me to go into the kitchen to make chocolate cupcakes were gone to waste because they didn’t actually look like the ones that were advertised! NO frosting, NO sprinkles; he wasn’t going to waste his time eating something so plain!

I found these amazing sprinkles that a fellow blogger was selling and they were just so dreamy and colorful I couldn’t resist them! I knew my son would love them. And then I found the most perfect chocolate frosting that we could also make together, to gain extra points :):)

I was honestly so proud of this frosting. It’s so easy and the texture is so perfect. It also tastes fantastic. It doesn’t crumble or harden just as long as you keep the cupcakes out in room temperature after frosting. And guess what, my son ate them! His friends did too!

These were another version we tried out for my son’s friend’s Ninja Turtles birthday. It was pretty cute seeing the kids run up to the table and try to steal some :).

Chocolate Frosting

Ingredients
  • 2 and 3/4 cup icing sugar
  • 6 TB cocoa powder
  • 6 TB butter (softened at room temperature)
  • 5 TB milk
  • 1 tp vanilla
Directions
  • Step 1 In a bowl, sift icing sugar and cocoa.
  • Step 2 In a large bowl, cream butter until smooth using a hand blender. Gradually add in sugar and milk. Add vanilla. Beat until light and fluffy.
  • Step 3 If needed, adjust consistency with milk and sugar (a little milk if it’s too thick, a little sugar if too watery).
  • Step 4 Refrigerate for exactly 8M and right before serving mix really well so that it’s back to room temperature.
  • Step 5 Frost cupcakes or cake and keep them out in room temperature.
